Huangshan
Huangshan : Dinning

Hui cuisine with more than a hundred years history is one of the Eight Major Cuisines of China. Hui, unlike other cuisines, features wild game. Cooking methods feature braising in soy sauce, stewing and steaming. Originating in Shexian County, Huangshan City, Hui Cuisine is strict about choosing materials, and making sure of freshness and tenderness.

 Representative dishes in Hui Cuisine

Mandarin Fish (Chou Guiyu): This dish features the Mandarin fish from the Xinan River. After salting, it is braised in soy sauce.

Steaming Shiji: Shiji is a kind of batrachia (frog or toad) living in mountain brooks. The shiji is cooked with a sauce of ham and fungi in the bamboo steamer. The taste is fresh, tender and refreshing.

Stewed Shier and Chicken: Shier is a kind of fungus steamed with chicken.

Shadi Mati Turtle: This dish with high nutritive value selects and uses big turtles sauced with ham, stewed in a terrine on a slow fire.

Huizhou Odorous Bean Curd: Odorous bean curd is a tough bean curd following fermenting, the surface of which is a layer of hair. It is fried, braised in soy sauce, steamed and baked. Every style has its own features.

 Recommended Restaurants for Hui Cuisine

 Laojie Diyi Lou

 Youjian Mao Doufu (Fried Odorous Bean Curd)
Odorous bean curd is a kind of sour bean curd with a layer of white hair fried in a pan then sprinkled with seasonings. While the bean curd smells bad, it is delicious. It is common to see in snack stalls. If you can bear the odor, you should try it.

 Xie Ke Huang (Yellow Crab Shell)
This Huizhou flavor snack is actually a baked sesame seed cake with a stuffing of meat and vegetables. It looks like a crab shell, hence the name Xie Ke Huang. The cakes are easy to store, convenient on a day trip.
